Featured Recipe of the Week: Zucchini Stix

If you are anything like me, then, you have Zucchini growing everywhere.  I LOVE “Fried” Zucchini dipped in ranch dressing and these Zucchini Stixs come pretty close to that.  I have to admit that they do remind me of fries when dipped in ketchup.  Enjoy these Zucchini Fries with your favorite grilled burger or any time you want a salty, crunchy, satisfying snack.

Weight Watchers Zucchini Recipes

INGREDIENTS

  • 1/2 cup panko bread crumbs
  • 1/4 cup Italian seasoned bread crumbs
  • 1 oz shredded parmesan cheese
  • 1 tsp dried Italian Seasoning
  • 1/2 tsp cayenne pepper
  • 2 large egg whites, lightly beaten
  • 2 large zucchini cut, cut into 1/4-1/4 inch fry shapes
  • Sea Salt and Black Pepper to Taste
  • Optional ~ Get fancy ~ add your own ranch or ketchup sauce for dipping

INSTRUCTIONS

1.  Preheat oven to 425 degrees and spray a large cookie sheet with nonstick spray.

2.  In a wide, shallow dish, combine panko through cayenne pepper.  Set aside.

3.  In a small bowl, lightly beat the egg whites and set aside.

4.  Working with one “fry” at a time, dip in the egg whites, then, breadcrumb mixture, pressing to adhere.  Arrange “fries” on the prepared cookie sheet in a single layer.  Discard remaining breadcrumb and egg whites.

5.  Bake until the coating is lightly browned and crisp, for about  20 minutes, flipping half way through.  Season to taste with sea salt and black pepper. 

Makes 4 servings, 2 points+ each

  1. What would you consider a large zucchini?

    • Hi Kim,

      I would say a large zucchini is about 7-8 inches and 2-3 inches in width. You could always do a few medium or small zucchini if that is easier.

  2. I love zucchini!!! I have a favor to ask. Is there any way you could post nutritional facts on your recipes if possible. I’m a calorie counter at this time to help keep my weight in check. Thanks!! I love all of your recipes.

    • HI Vanessa,

      You know, we get the request a lot to include the nutrition facts. I will see what we can do to include them. In the meantime, have you ever used caloriecount.com? It is my FAVORITE site for calculating stats because you can copy/paste a recipe and it gives you the nutritionals. You do have to do a little tweaking if it can’t find the exact ingredient or gives you a 0 calorie count on it. However, once you get the hang of how the site works, it goes quickly. Another great option, myfitnesspal.com.

  4. I joined today! Love this site! My zucchini are sometimes over 20″ long. How do you know when they are ripe? Should I be picking them when they reach a certain length? Anyone know. Thanks!

    • Lisa, I just joined today and saw your post. Zucchini are better if you pick them about the size of cucumbers. When they get too large they get more seedy. They can still be used in a lot of recipes, especially baked goods and stuffed zucchini. But the flavor and texture is better when they are picked smaller.

  5. I just made these tonight and they were soooo good! I told my husband they were a healthy alternative to the fried ones he likes to get at the sports bar. He took one bite and says “how did you get them so crispy?”. LOL He loved them too.
