Featured Recipe of The Week: Butternut Squash Fries

This is quite possibly one of the easiest “fry” recipes you will ever make.  I LOVE making Butternut Squash fries when I want something different and I want to save my points+ to enjoy a delicious burger.  Serve these as a side or have them a an afternoon snack when you want something salty like chips.  Either way…..try them and tell us what you think!

Weight Watcher Fry Recipes

INGREDIENTS

  • 1 small butternut squash
  • 1 Tbsp olive oil
  • Sea Salt to taste

INSTRUCTIONS

1.  Preheat oven to 450 degrees.  Peel and seed butternut squash.  Cut into 1/4 inch “fry” shapes.

2.  Toss with Olive Oil and sea salt.  Arrange on a cookie sheet in a single layer.

3.  Bake at 450 for 25 minutes or until lightly browned, flipping half way through.

Makes 3 servings, 1 point+ each (the ENTIRE recipe is 3 points+ for the oil only as Butternut Squash is FREE!)

  1. These are delicious!! I made some last night!! substituted olive oil with flaxseed oil, added a little nutty flavor and were delish!! also great with a little garlic pepper sprinkled on top!!! keep the awesome recipes coming, great job :)
