Feature Recipe of the Week: Super Cheesy Cheddar Sauce

Shannon of Shannon’s Kitchen Creations won my heart over with this recipe because my Mom got me to eat my veggies by covering them all with CHEESE SAUCE! Shannons is not a huge vegetable fan. She knows that Moms are not supposed to admit this but, just don’t tell her kids. She likes to hide vegetables in dishes, so that no one will notice, including her. This cheese sauce is super simple and very versatile. It is delicious over veggies or pasta and is only 2 points+ a serving.
INGREDIENTS
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 ½ cup 2% shredded Cheddar Cheese
- Dash black pepper
- 1-1/2 cups fat free milk
INSTRUCTIONS
1. In a small saucepan melt butter. Stir in flour, salt, and pepper. Stir in milk all at once. Stir in Cheese and stir over medium heat until thickened and bubbly.
2. Makes 2 cups of Cheddar Cheese Sauce,

Think OUTSIDE the box when it comes to flavoring your veggies & salads. Spritz lemon juice over salad,s steamed, grilled or sautéed green vegetables of any kind: broccoli, snap peas, fresh spinach, asparagus, green beans, zucchini. For even brighter flavor, grate the rind of half a lemon using a microplane or zester, and add that to the dish. Season with garlic salt or sea salt and pepper, then, dig in!
