Featured Recipe of the Week: Zucchini Stix

If you are anything like me, then, you have Zucchini growing everywhere.  I LOVE “Fried” Zucchini dipped in ranch dressing and these Zucchini Stixs come pretty close to that.  I have to admit that they do remind me of fries when dipped in ketchup.  Enjoy these Zucchini Fries with your favorite grilled burger or any time you want a salty, crunchy, satisfying snack.

Weight Watchers Zucchini Recipes

INGREDIENTS

  • 1/2 cup panko bread crumbs
  • 1/4 cup Italian seasoned bread crumbs
  • 1 oz shredded parmesan cheese
  • 1 tsp dried Italian Seasoning
  • 1/2 tsp cayenne pepper
  • 2 large egg whites, lightly beaten
  • 2 large zucchini cut, cut into 1/4-1/4 inch fry shapes
  • Sea Salt and Black Pepper to Taste
  • Optional ~ Get fancy ~ add your own ranch or ketchup sauce for dipping

INSTRUCTIONS

1.  Preheat oven to 425 degrees and spray a large cookie sheet with nonstick spray.

2.  In a wide, shallow dish, combine panko through cayenne pepper.  Set aside.

3.  In a small bowl, lightly beat the egg whites and set aside.

4.  Working with one “fry” at a time, dip in the egg whites, then, breadcrumb mixture, pressing to adhere.  Arrange “fries” on the prepared cookie sheet in a single layer.  Discard remaining breadcrumb and egg whites.

5.  Bake until the coating is lightly browned and crisp, for about  20 minutes, flipping half way through.  Season to taste with sea salt and black pepper. 

Makes 4 servings, 2 points+ each

Featured Recipe of the Week: 0 Points+ Banana “Ice Cream”

Hi everyone!  We are heading off to Vegas!  I just wanted to pop in to tell you that I have a GIVEAWAY plus some fantastic contributor posts lined up for you all this week.  Stay tuned tomorrow for when all the fun begins….for now, I wanted to share one of my favorite posts on Friends and tell you all to MAKE THESE SUNDAES to beat the heat!

It only takes 3 simple steps to make a 0 Points+ Healthy Banana Sundae.  This recipe is so easy to make and honestly tastes just like ice cream ~ super creamy, super rich and fluffy like whipped cream.  It melts in your mouth and is guaranteed to cure any craving you have for the real deal.

Healthy Banana Sundae

 1.  SLICE and FREEZE your super right bananas.  It’s really important to slice your bananas BEFORE you freeze them or you can burn out the motor in your blender, chopper, food processor, etc.  I didn’t feel like busting out my Food Processor, so I pulled out the next best thing ~ My Black & Decker Mini Chopper.

Banana Soft Serve Ice Cream

2.  Add a splash of vanilla extract and 1 Tbsp of Fat Free Milk, ,Almond Milk or Chocolate Almond milk and blend away until smooth and creamy.  You may have to add 1 additional Tbsp of milk if it’s too thick.  Looks just like ice cream, huh?

Weight Watchers Ice Cream

 3.  Heat 1 Tbsp of your favorite caramel sauce (it spreads further if it’s hot) and drizzle with a little whipped cream.

Variations

Strawberry Ice Cream

* Chocolate Banana Ice Cream ~ Add 1 Tbsp unsweetened cocoa powder
* Chocolate Peanut Butter Banana Ice Cream ~ Add 1 Tbsp unsweetened cocoa powder & 1 Tbsp Peanut Butter Powder
* BANANA SPLIT ~ Add 3 frozen strawberries and drizzle with 1 Tbsp Chocolate Syrup and Whipped Cream
* Strawberry Banana Frozen Yogurt ~ Add 4 oz Fat Free Strawberry Yogurt with 3 Strawberries.

Makes 1 BIG Bowl of Ice Cream ~ O points+ with no toppings, 1  points+ with 1 Tbsp Caramel & Whipped Cream

Featured Recipe of the Week: Nectarine Raspberry Sorbet

 This is one of my favorite desserts to have during the summer when it’s hot.  If you have NEVER put your sorbet, frozen yogurt or ice over fresh fruit, you HAVE TO try it ~ it’s awesome.  I LOVE the combination of creamy homemade sorbet over fresh fruit (it doesn’t hurt that fruit is 0 points+ either!).  You can find a fantastic selection of using what is “in season” at your local farmer’s market to create a refreshing and healthy dessert that will have you going back for more.

Weight Watchers Sorbet Recipes

INGREDIENTS

  •  6 ripe nectarines
  • 1 pint raspberries
  • 2/3 cup water
  • 1/4 cup sugar
  • 1/4 cup honey
  • 1 tSP freshly squeezed lemon juice
  • 4 cups of your favorite fruit blend (strawberries, raspberries, blueberries, nectarines, peaches ~ whatever is in season and full of color)

 INSTRUCTIONS

1.  Slice the nectarines in half and remove the pits. Cut the unpeeled nectarines into small chunks and cook them with the water in a medium saucepan, covered, over medium heat, stirring occasionally, until they’re soft and cooked through, about 10 minutes. Add a bit more water if necessary during cooking.

2.  While the nectarines are cooking, rinsed your raspberries, pat them dry and blend them in your food processor. Drain through a sieve placed on a small bowl to remove seeds, reserving the raspberry juice. Set aside.

3.  Remove from the heat and stir in the sugar and honey. Let cool to room temperature. When cool, purée the mixture in a blender or food processor until smooth. Stir in the raspberry puree and the lemon juice.

4.  Chill the mixture thoroughly in the fridge, and then freeze it in your ice cream maker according to the manufacturer’s instructions. If you do not have an ice cream maker, place sorbet in a square baking dish and freeze until solid.  You may need to let the dish sit out for about 10 minutes to soften if it’s too hard.

5.  Serve your nectarine sorbet over your favorite zero points+ fruit blend and enjoy!

Makes 1 quart, eight 1/2 cup servings, 3 points+ each

Featured Recipe of the Week: Salted Cinnamon Caramel Corn

If you are a fan of salty, sweet, and crunchy snack foods, then, you are going to LOVE this recipe for Salted Cinnamon Caramel Corn.  You could get creative and make your popcorn into a snack mix by adding dried fruit, nuts, coconut and/or chocolate (just count the points+ for any additions).  This is my goto snack for movies or when I want something to cure my afternoon snackiness.

Weight Watchers Caramel Corn Recipes

INGREDIENTS

  • 5 cups air popped popcorn
  • 1 tsp agave nectar
  • 1/2 tsp water
  • dash of sea salt
  • sprinkles of cinnamon

INSTRUCTIONS

1.  Cook popcorn in an air popper or according to packaged instructions. 

2.  Mix agave and water – drizzle (or mist, if you have a mister) over popcorn.  Add a dash of salt and sprinkles of cinnamon.

NOTE: If you use microwave Smart Butter pop in place of the air popped popcorn and omit the sea salt.

Makes 1 BIG serving, 4 points+

Featured Recipe of the Week: Sesame Cucumber Salad

This Sesame Cucumber Salad is incredibly easy to make and quite tasty.  It works well as a side dish or served up on top of a salad using the marinade as the “dressing”.  Make up a batch and store it in the fridge to snack on whenever you want something sweet and crunchy that will not eat up your points+ budget.

Weight Watchers Side Salad Recipes

INGREDIENTS

  • 2 Large English Cucumbers or 10 Small Japanese Cucumbers
  • 1 ½ cups Rice Vinegar
  • 4 Tablespoons Aji-Miirin (Sweet Japanese Wine)
  • ½ cup sugar (the real deal works best here)
  • ¼ cup sesame seeds
  • Sea Salt

INSTRUCTIONS 

1.  Roast sesame seeds in a pan over medium heat until toasted about 1-2 minutes stirring frequently until lightly browned.

 2.  Thinly slice the cucumbers using a salad shooter or manual cucumber slicer. Place sliced cucumbers in a strainer and sprinkle with salt until well covered.  Let stand for 15-30 minutes and rinse. After rinsing squeeze excess water and juice out of cucumbers.

 3.  Stir the vinegar and sugar until the sugar is dissolved.  Add cucumbers and sesame seeds to the liquid mixture and stir well.

 4.  Let stand 1-2 hours or overnight (best results) to marinate.

 Note: Due to the content of the vinegar, the items store best in glass dishes or jars.

Makes twelve 1/4 cup servings, 1 points+ each
