Meet Jen & Help us Name Her Posts!

I am glad you all are enjoying our contributor series as much as we are.  We really have a great group of people here on Friends and I LOVE that you all support each other whether it’s posting here or in the forums or groups.  I’d like to introduce you all to our next contributor ~ Jen!  Jen is going to host a weekly spot here on Friends where she will share Weight Watcher friendly recipes that are not only delicious, but, will be helpful for those with food allergies!
 

We actually NEED your help!  Jen and I both thought it might be fun to help you all come up with a name for her Weekly Recipe Series….Simply read what she is all about below and leave a comment with your ideas!

My name is Jen, and I am mom to six kids – five boys, and one girl. Yes, you read that right. I spend my days making meals, cleaning up messes, doing laundry, and shuttling kids to lessons, camps, and activities. My life is probably very similar to many of you. However, we do have one big difference in our lives – food allergies.

Our oldest child, now 14, spent the first ten years of his life battling one illness after another. He had chronic ear infections, respiratory infections, and as a baby, suffered from serious acid reflux. None of us, doctors included, ever considered food could be a culprit in his struggles. Four year ago, one of his doctors looked at the whole picture, and suggested we do some testing. The results shocked us all! He was highly allergic to dairy and eggs, and a few other things. I went through the panic of what are we going to eat? I searched online, studied the aisles in the health food store, and finally found a balance in our menu.

Due to his results, we had the other children tested as well. We determined two others have gluten intolerance, and another is sensitive to milk. I went through another panic moment when gluten needed to be eliminated. Now, the foods I prepare for our whole family are dairy, egg, and gluten free.

So where does Weight Watchers fit into this? I struggled with my weight as a child, until high school, when I began exercising in earnest. I dropped thirty pounds over one summer, and never felt better. I maintained my weight until college, when I gained the dreaded “freshman fifteen.” I stayed at that weight, eating unconsciously, until marriage. Six babies later, and my body had been through a lot! Earlier this spring my good friend (Hi Jen!) began the Weight Watchers program. I visited her shortly afterward, and realized what a versatile program it was. She was still eating normal foods, and we even went out for ice cream. Inspired by her success, I joined the program in April 2011. Since that time, I have incorporated the points plus program into our daily menu. I’ve adapted a few of my stand-by recipes to make them healthier, and I’ll be sharing them with you. Weight Watchers has become a family affair in my house, and my kids are more aware that foods have value. My husband is also following the program, and has taken inches off his waist line. It’s an exciting time for all of us.

Featured Recipe of the Week: 0 Points+ Banana “Ice Cream”

Hi everyone!  We are heading off to Vegas!  I just wanted to pop in to tell you that I have a GIVEAWAY plus some fantastic contributor posts lined up for you all this week.  Stay tuned tomorrow for when all the fun begins….for now, I wanted to share one of my favorite posts on Friends and tell you all to MAKE THESE SUNDAES to beat the heat!

It only takes 3 simple steps to make a 0 Points+ Healthy Banana Sundae.  This recipe is so easy to make and honestly tastes just like ice cream ~ super creamy, super rich and fluffy like whipped cream.  It melts in your mouth and is guaranteed to cure any craving you have for the real deal.

Healthy Banana Sundae

 1.  SLICE and FREEZE your super right bananas.  It’s really important to slice your bananas BEFORE you freeze them or you can burn out the motor in your blender, chopper, food processor, etc.  I didn’t feel like busting out my Food Processor, so I pulled out the next best thing ~ My Black & Decker Mini Chopper.

Banana Soft Serve Ice Cream

2.  Add a splash of vanilla extract and 1 Tbsp of Fat Free Milk, ,Almond Milk or Chocolate Almond milk and blend away until smooth and creamy.  You may have to add 1 additional Tbsp of milk if it’s too thick.  Looks just like ice cream, huh?

Weight Watchers Ice Cream

 3.  Heat 1 Tbsp of your favorite caramel sauce (it spreads further if it’s hot) and drizzle with a little whipped cream.

Variations

Strawberry Ice Cream

* Chocolate Banana Ice Cream ~ Add 1 Tbsp unsweetened cocoa powder
* Chocolate Peanut Butter Banana Ice Cream ~ Add 1 Tbsp unsweetened cocoa powder & 1 Tbsp Peanut Butter Powder
* BANANA SPLIT ~ Add 3 frozen strawberries and drizzle with 1 Tbsp Chocolate Syrup and Whipped Cream
* Strawberry Banana Frozen Yogurt ~ Add 4 oz Fat Free Strawberry Yogurt with 3 Strawberries.

Makes 1 BIG Bowl of Ice Cream ~ O points+ with no toppings, 1  points+ with 1 Tbsp Caramel & Whipped Cream

Meet Beth of “Try This On For Size”

We are back this week with another one of our awesome new contributors, Beth!  Beth will be keeping us up to date with her challenges in her series “Try This On For Size” series.  Please join me in giving Beth a warm welcome as she shares her experiences as one of us doing an Extreme Workout Series.

Hi everyone!  First of all, I would like to thank Danica for allowing me this opportunity to post on her blog.  I’m so excited to be sharing this experience with all of you!!

I’m Beth, 33 year old mother of one, 8th grade Language Arts teacher, serial Weight Watcher and caffeine addict.  For the past year of two, I have been seeing my weight   c  r  e  e  p  i  n  g  up despite doing a ton of cardio and (mostly) following the Weight Watchers plan.  I knew I needed to integrate strength/weight training into my routine, but I wasn’t quite sure how to do so.  I tried following plans from magazines, books, and blogs, but nothing stuck.  Then I saw the infomerical for Chalean Extreme, a program put out by Chalene Johnson and Beachbody.

I was intrigued…but I couldn’t quite get myself to pull the trigger.  I researched and Google’d and found that the vast majority of the reviews that I found were from Beachbody “coaches,” people who represent the BB company in return for discounts and compensation for sales done through their site.  Despite the lack of “real girl” reviews, I finally ordered my set and am ready to “Get Extreme.”  I’m taking all of you on my three month journey with weekly, uncensored progress reports, reviews, and pictures. (YIKES!!)

Weekly Challenge: Reality Check!

This is officially our last week to work on our July 4th Challenge.  How did you do this past week at taking steps towards meeting your goal?  If you are doing well, keep working it!  If you feel like you could do better or you missed it, re-adjust your goal and set a new one for this week!  There is still time to set a goal and reach it ~ what is yours going to be? You can do it!  We are all here to cheer each other on along the way so don’t be afraid to ask for support.

This week’s Weight Watchers Flyer really got me thinking about ways I can IMPROVE my Weight Loss Journey.  Two things came to mind and I think we can always use a reality check every now and then.

Do you all ever struggle writing down every single bite you eat or even tracking your entire days eats?  I know that sometimes we are all PUMPED whenever we start a new program, then, after a few months we start to get a little relaxed, track less and sometimes no longer even measure out our foods.  I mean, afterall ~ it’s summer, it’s vacation time, who wants to do that.  However, this is when I think we can do our best.  I honestly believe the secret to success of the program is writing it all down.

This week I challenge all of you to do TWO things:

1.  Track every single bite you take each day for the next 7 days.  Be honest with yourself ~ if you bite it, write it!  You might be surprised how many “bites” you don’t take because it’s not worth figuring out the points+ for them.

2.  Measure it!  Bust out those measuring spoons, cups and scale.  I know this is a BIG area for me because my 1 cup of pasta “grows” if I eyeball versus measure it especially if I am HUNGRY.

What tool for success do you use to track and/or measure your food?  Do you use paper trackers, the online tracker or your own personal journal?
